Honestly, if it were me...I would just live with it if it cycles the freezer like it should. I would just throw the knob out if you can't get it to seat properly. Since you can still turn the thermostat from the shaft you can still adjust it to where it needs to be. Once you have the temperature where you want it, you can put a mark on the shaft and the body of the thermostat so that you will know where the "normal" position is.

I ordered a universal thermostat with adapter kit...so I could use the original dial/knob...for my '53 GE....from Antique appliances Co. online.

Hopefully you can make it all work. I've had hard times getting the original knob to fit a universal thermostat let alone making the thermostat work right. Sometimes you get lucky though. Good luck!
