Those are great for certain things, like fan motors and tube radios; however they are completely unsuitable for a split-phase start motor such as a Monitor Top compressor motor. These compressor motors depend on receiving full voltage at startup. When started "across the line" at rated voltage, the current flowing in the windings, and the voltage drop across the starting resistor will allow the start relay to close and the motor to produce a phase-shift for starting. Gradual voltage buildup on a Variac will result in very high current draw and a no-start situation, until a certain point. Then at that point, the start relay will close and it will start with great difficulty.
